Description: Use a standardized SKU structure to organize items by menu category and item type. This structure improves system consistency, simplifies inventory tracking, and ensures accurate reporting across food and beverage (F&B) and merchandise menus.


F&B SKU Standards

Menu Categories

Use a single-digit prefix to identify the top-level category in a 7-digit SKU. The fourth digit identifies the menu subcategory.

SKU Prefix Guide:

  • 1 – Food

  • 2 – Beer

  • 3 – Wine

  • 4 – Liquor

  • 5 – Non-Alcoholic Beverages

  • 6 – Undefined

  • 7 – Retail

  • 8 – Miscellaneous

  • 9 – Modifiers

Note: The 7-digit SKU format reflects the hierarchy: the first digit marks the top-level category, and the fourth digit marks the subcategory.

Item Categories

Use a four-digit number to define item categories. The first digit should match the related menu category. Include this number in the Canopy Display Name to maintain consistency.

Examples:

  • 1000 – Entrees

  • 1001 – Favorites

  • 1002 – Snacks

  • 1003 – Candy

  • 1004 – N/A

Modifier Item Categories

Use a four-digit number for modifier categories:

  • 9001–9026 – Food modifiers, categorized alphabetically by first letter

  • 9050–9075 – Drink modifiers, categorized alphabetically by first letter

To further organize modifiers by parent category, use this format: 9XYY, where:

  • X = primary item category (e.g., 1 = Entrees, 2 = Beer, 3 = Wine)

  • YY = alphabetical placement of the modifier

Examples:

  • 9101 – Entree modifier starting with A

  • 9226 – Beer modifier starting with Z

  • 9323 – Wine modifier starting with W

Merchandise SKU Standards

Menu Categories

Use a two-digit number to identify merchandise menu categories.

Examples:

  • 10 – Apparel

  • 11 – Souvenirs

  • 19 – Consignments

Item Categories

Use a three-digit number for merchandise item categories. The first two digits should match the related menu category. Include this number in the Canopy Display Name.

Examples:

  • 100 – Men’s Apparel

  • 101 – Women’s Apparel

  • 102 – Children’s Apparel

  • 103 – Hats

Items

Merchandise items should use a 7-digit SKU, with the first three digits representing the item category.
